Join Green Vegetarian Cuisine Manager Chad Hankins and his wife Nako as they debut their own plant-based restaurant concept -- The Cutting Board.
This fall, Chad and Naco will move to Pueblo, CO to launch The Cutting Board to the plant-based and vegetarian-curious community in Southern Colorado.
We're so honored that Chad and Nako have chosen to work at Green to refine their entrepreneurial dreams, so come support and wish them the best on their new endeavors on March 29.
There will be two seatings for this four-course dinner, which will include drinks. BYOB is permitted.

Course 1
Quinoa Cake: topped with a roasted red pepper and white bean puree, arugula tossed in lemon oil, sliced avocado, and pink peppercorns
Course 2
The Super Bowl: black beans stewed in coconut milk and dried chiles, lime rice, chopped mango, sliced avocado, and a garnish of cilantro
Course 3
The Riley: thin spaghetti in a traditional red wine marinara, topped with roasted portobello mushrooms
